Chocolate Avocado Mousse

This chocolate mousse is made with fiber and nutrient full avocado and you won't believe how creamy it is. It’s rich, silky, deeply chocolatey, and naturally sweetened with maple syrup and a little bit of your favorite brand of dark chocolate. No cream, no eggs, no cooking required... just blend the simple ingredients together and it’s done. Eat it right away for a soft, pudding texture or freeze it into little cubes for grab-and-thaw portions whenever you want something sweet. Top with berries, cherries, or roasted nuts or enjoy it as is for a satisfying chocolatey treat.


Chocolate Avocado Mousse

Ingredients:

2 large ripe avocados (use 3 if your avocados are on the small side)
1/4 cup cocoa powder
2-3 oz dark chocolate, melted
1/4 cup maple syrup (Can start with 1/8 and add more to adjust for sweetness preferences)
1 tsp vanilla extract
Pinch of salt

Directions:

1. Microwave the dark chocolate in the microwave safe bowl in 25-second intervals, stirring until smooth.

2. Add the avocado flesh, cocoa powder, melted chocolate, maple syrup, vanilla, and salt to a blender or food processor. Blend until completely smooth and creamy, scraping down the sides as needed. Taste and add more maple syrup for sweetness or a pinch more salt to enhance the chocolate flavor.

3. Serve immediately for a soft, pudding-like texture, or chill for 1-2 hours to thicken into a more traditional mousse consistency. You can also freeze it for later, either in one freezer safe container or portion it into large silicone ice cube molds for easy single servings. If using molds, freeze until solid, then transfer the frozen portions to a container or freezer bag for longer storage. When you’re ready to enjoy, place your desired portion in the fridge and let it thaw for a few hours until smooth and creamy again.
