Cherry Italian Ice
Makes about 1 – 1.5 quarts
Ingredients:
2 cups water
1-1/4 cup sugar
3 cups sweet cherries, pitted, halved
1/2 cup freshly squeezed lime juice (about 2 large limes, or 3 medium limes)
Directions:
1. Pre-freeze the ice cream maker’s insert at least 8 hours prior to churning.
2. In a saucepan over medium heat, combine the water and sugar. Heat just until the sugar is completely dissolved. Remove from heat. Add the pitted cherries and cool to room temperature. Add the freshly squeezed lime juice to the cooled mixture.
3. Puree in a high speed blender, food processor, or with an immersion blender until the mixture is smooth. Strain the mixture discarding the sieve’s contents.
4. Place the mixture in the refrigerator until well chilled. When ready, place the chilled cherry mixture in the ice cream maker and churn for 15-20 minutes, or until the mixture becomes frozen. It will still be somewhat soft at this stage.
5. Serve immediately, or transfer the cherry ice to a freezer container outfitted with a lid and place in the freezer to harden for a few hours
6. Scoop out small portions of the cherry ice, garnish with mint or lime slices.
