Hot Honey & Goat Cheese Baked Sweet Potatoes
(Serves 4)

Ingredients:
4 medium sweet potatoes
Olivelle Caramelized Garlic Infused Olive Oil
Kosher salt and freshly ground black pepper
1/3 cup honey
1-2 tablespoons hot sauce (adjust to taste)
4-6 ounces goat cheese, softened to room temperature
1/2 cup Roasted pecans, chopped
Flaky sea salt

Directions:

1. Bake the sweet potatoes:

Preheat the oven to 425 F. Scrub the sweet potatoes clean, pierce each a few times with a fork, and rub lightly with Olivelle Caramelized Garlic Infused Olive Oil. Place on a baking sheet lined with parchment and bake for 45-55 minutes, until very tender and easily pierced through.

2. Make the quick hot honey:

While the potatoes bake, stir the honey and hot sauce together in a small bowl until fully combined. Taste and adjust the heat as needed.

3. Prepare the goat cheese:

Let the goat cheese sit at room temperature so it softens slightly. For an extra creamy texture, you can whip it briefly with a fork.

4. Assemble and serve:

Split each baked sweet potato open lengthwise and fluff the inside with a fork. Sprinkle or spread goat cheese into the hot potatoes so it melts slightly. Drizzle generously with hot honey, sprinkle pecans, and finish with black pepper and flaky salt. Serve while warm.
