Tahini Miso Dressing

Tahini, white miso, lemon, and a little honey come together to make this creamy, bright, umami-packed dressing we’ve had on repeat all summer. It only takes about 5 minutes to make, doesn’t require a blender, and instantly upgrades whatever you’re eating. Drizzle it over grilled veggies, toss it with a crunchy summer slaw, or use it as a sauce for rice bowls and wraps. This is one of those “put it on everything” kind of sauces.

Tahini–Miso Dressing

Ingredients:

1/4 cup tahini
1 tbsp white miso paste
1 tbsp rice vinegar
1 tbsp fresh lemon juice
1-2 tsp soy sauce (to taste)
1-2 tsp honey (to taste)
2-4 tbsp water (to thin)

Directions:

1. In a bowl, whisk together tahini and white miso paste until smooth.

2. Whisk in rice vinegar, lemon juice, soy sauce, and honey.

3. Add water 1 tablespoon at a time until you reach your desired consistency (drizzly for a salad dressing or creamy for a dip).

4. Taste and adjust based on your preferences. Want it brighter? Add more lemon. Saltier? A splash of soy sauce. Sweeter? A touch more honey.
