Summer Farmer's Market Pasta

Summer Farmer's Market Pasta
serves 4
Ingredients:
1 lb bacon, cooked and crumbled
4 ears of fresh corn, cut off the cob
2 cloves of garlic, sliced
8 oz cherry tomatoes, halved
8 oz fresh "cherry sized" mozzarella balls, halved
1/4 cup fresh basil, chiffonade
1 lb linguine, reserve 1 cup pasta water
2 tablespoons butter
2 tablespoons olive oil
kosher salt and pepper, to taste
Directions:
1. Fry the bacon, and crumble into bite-sized pieces.
2. Cut the corn off the cob, and prep the garlic, tomatoes, mozzarella and basil.
3. Boil the pasta, and reserve 1 cup of the pasta water.
4. In a large saute pan, saute garlic in butter and olive oil until fragrant. Add the cooked pasta, bacon, corn, tomatoes, and reserved pasta water and stir until noodles are coated. Sprinkle with salt and pepper.
5. Add in mozzarella balls and basil and serve immediately.
