Banoffee Date Toast
Turn simple toast into a rich, dessert-worthy treat with just a handful of wholesome ingredients. Sticky, caramel-like dates, creamy nut butter, golden caramelized bananas, and a drizzle of dark chocolate come together with a pinch of flaky sea salt for the perfect balance of sweet and salty, reminiscent of sticky toffee pudding. Banoffee Date Toast
Serves 2
Ingredients:
2 slices crusty artisan bread
6 Medjool dates, pitted and soaked in warm water (10 minutes)
2 tbsp nut butter (almond, peanut, cashew, or sunflower if avoiding nuts)
1 banana, sliced in half and then each half sliced down the center in half again
2 oz dark chocolate, melted
Pinch of flaky sea salt
Directions:
Prepare the dates:
Soak the dates for 10-20 minutes in hot water (time will depend on how dry/firm the dates were). Drain the dates and set aside.
Caramelize the banana:
Can be done in a skillet or air fryer.
Skillet: Cook banana slices in butter over medium heat for 2-3 minutes per side until golden and caramelized.
Air fryer: Cook at 375 F for 6-8 minutes until soft and slightly browned.
Toast the bread:
Toast until golden and crisp on the outside.
Build the toast:
Add 3 dates to each slice of toast then use the back of a fork to mash and spread the dates out. Add a layer nut butter. Place half of the banana on each toast then top with a drizzle with melted chocolate and a sprinkle of sea salt.
