2-Ingredient Cottage Cheese Crisps

Ingredients:

1 cup full-fat cottage cheese (we love Good Culture!)Everything But the Bagel seasoning

Directions:

1. Drain the cottage cheese.

Pour it into a fine mesh strainer and let it drain for at least 10–15 minutes. Transfer the cottage cheese to a sheet of paper towel and then place a second sheet of paper towel on top. Press down gently to release any remaining excess liquid. (This step matters, extra liquid = soggy crisps.)

2. Prep, portion & spread.

Preheat oven to 350 F. Line a baking sheet with parchment paper. Scoop small mounds (about 1 tablespoon each) onto the parchment, leaving space between each one.

3. Flatten thin.

Use the back of a spoon to gently flatten each mound into a thin circle. The thinner they are, the crispier they'll get.

4. Season.

Sprinkle generously with Everything But the Bagel seasoning.

5. Bake.

Bake at 350 F for 25-35 minutes, or until golden brown around the edges.

6. Cool completely.

Let them cool on the pan. They crisp up as they cool (don't skip this step!). Once cooled and crisp, peel off of the parchment paper. Enjoy!
