Charred Chicken Tacos
Its Taco Tuesday!
We have a really nice and easy family taco Tuesday recipe for you guys!
Tacos are a really easy way to combine so many food groups and they are so amazing to play around with flavor wise. For instance, you could make pork pineapple salsa tacos or beef avocado or even super cheesy chicken tacos (all sound delicious right now). Charred chicken has such an amazing smoky flavor that really pops compared to bland regular chicken breasts.

Ingredients:
- 1 pound chicken breast
- 2 packs of taco seasoning (the amount really depends on your taste buds)
- 2 chopped bell peppers
- 2 avocados cut into slices
- Salsa of your choice (store bought or home made or our Simply Grilled Corn Salsa)
- Pack of tortillas (corn or flour)
- Pack of shredded cheddar cheese
- Quartered limes
Steps:
- Prepare the chicken by sprinkling with salt and then coating in taco seasoning
- Put olive oil in a pan
- place chicken on the pan and sprinkle on top with some more taco seasoning
- OPTIONAL: put a small piece of butter on top of each chicken piece for when you flip
- Leave chicken on medium high to roast in the seasoning and oil
- Before flipping the chicken, squeeze a quarter of lime into the pan
- After several minutes when both sides of the chicken are charred, lower the heat to medium low, add the bell peppers, and cover
- When chicken is fully cooked and peppers have softened, chop the chicken, and scoop into each tortilla
- Add avocados, salsa, shredded cheese, and lime on top
Feel free to also add sour cream, hot sauce, or make the avocado slices into guac, or experiment with different salsas!
